1 Kg Chicken (Cut into small pieces)
Fresh Chilies – 2 handfuls (can add some dried chillies for extra redness.
Shallots (a handful)
Candle nuts (A handful)
A bit of tumeric.
3 stalks of lemon grass (just smack with back of knife)
Kafir Lime leaves (slice into shreds)
Method;
Blend chillies, shallots, tumeric and candle nuts.
Add chicken, lemon grass and chilli paste into a wok.
Cook until tender, then add a little bit of oil.
Add kafir lime leaves and salt.
Stir fry until meat are well done.
