Candle Nuts contain so much oil that you can stick the midrib of a palm leaf through their centre and light them up, just like a candle. Toxic when raw, Candle Nuts are always dry roasted before used in Malaysian curries and satays for thickening. Cut them into slivers, then roast and toss through a light Asian salad; they add a pleasing nutty texture and taste.
